It is NO JOKE, I enjoy a sweet treat every now and again. The hardest part of the whole candida struggle is the whole no sugar deal. BLAH. what fun is life without a cookie now and then, right?
I am a big fan of everything in moderation. So I did some experimenting and came up with this delicious cookie. My husband tells me I need to use the word COOKIE carefully. Okay, if you are used to eating a ton of processed food and sugar this may not be high on your list of repeat foods, but for ME – it was heavenly!
1 egg (Free range/cage free/organic)
1 Tablespoon of almond flour
1 Tablespoon of coconut flour
1 Teaspoon of organic stevia
1 Teaspoon of pure vanilla extract
1 Teaspoon of Enjoy Life (diary free/soy free/nut free) Chocolate Chips
1 microwave friendly mug!
In a small bowl, combine your dry ingredients. In add in your egg and vanilla – combine. Add in your chocolate chips. Spray your microwavable mug with a non-stick spray and add in your cookie mix. Microwave for 1 minute 30 seconds (approximately, as microwaves tend to vary).
While this is okay on the candida diet – it is important to remember this is a TREAT. Eating 5 of these mug cookies a day could be hazardous to your waistline!

I am always movin’ grooving’ and runnin’ – busy!!! So I like to make QUICK and EASY meals that are also HEALTHY that I can grab and go. THIS is a go-to for me! In fact, some weeks, I eat this every day for lunch. Its THAT good! I make a BIG batch and just portion it out. You can freeze it or keep it in the fridge for a few days.
This is actually from the 21 Day Fix Extreme nutrition guide and makes 4 servings and 2 fajitas each
1tsp chili powder
1/2 tsp. sea salt
1/2 tsp ground cumin
1/2 tsp garlic powder
1/2 tsp olive oil, divided, use
4 (5-6oz) raw chicken breast, boneless, skinless, cut into 1/2 in strips
1 medium red or green red bell pepper, cut into thin strips
1 medium onion, thinly sliced
1 tbsp fresh lime juice
8 large romaine (or butter) lettuce leaves
1/2 medium avocado, thinly sliced
1 cup fresh salsa
lime wedge for garnish optional
Combine chili powder, salt, cumin, garlic powder, and 1 tsp oil in large resealable plastic bag.
Add chicken, bell pepper, and onion; mix gently to coat. Refrigerate for 15 minutes. (or longer if you’re like me and get distracted!!!)
Heat remaining 1 tsp. oil in large nonstick skillet over medium-high heat. Empty contents of bag into skilled to cook stirring frequently, for 5 to 6 minutes, or until chicken is cooked through. Remove from heat. Add lime juice.
Evenly top lettuce leaves with chicken mixture, avocado and salsa.

As a mom of 3, I am super busy in the mornings. I make these egg cups ahead on Sundays and then have enough to last me all week. The kids enjoy them too, so sometimes a week turns into a few days! …but that is A-OK! You can switch it up and mix in different veggies and experiment with different flavors. The 21 Day Fix portion sizes are 1 red and 1 green
This recipe makes for a great FAST FOOD, helping you to skip a drive through. You get an easy protein option and veggie. Add a hot cup of green tea and you’ve got the perfect breakfast!
12 large eggs
ground black pepper (to taste; optional)
1 bag (10 oz) baby spinach, chopped
1 medium red bell pepper, chopped
2 green onions, chopped
Nonstick cooking spray
1. Heat oven to 350° F.
2. Beat eggs in a large bowl. Season with salt and pepper if desired. Add spinach, pepper, and onions to egg mixture; mix well.
3. Lightly coat a twelve cup muffin tin with spray.
4. Evenly pour egg mixture into muffin cups.
5. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of cups comes out clean.
